Aunt Shirley’s Loaded Potato Casserole
1cup bacon, cooked crisply and chopped
6 cooked potatoes (boiled whole, peeled if you want, and cubed)
1 1/2 cup shredded cheese
1 stick butter, melted
1/2 cup milk
1/2 cup sour cream
1 medium onion
1 cup chives, chopped
Melt butter, cook onion until soft , allow to cool slightly. Add milk, sour cream, and chives, stir until blended. Pour sauce over cubed potatoes, add bacon and cheese, and mix well. Add all to a square baking pan, bake at 375℉ for 20-25 minutes.
Top with French’s fried onions, if you like.
