Cranberry Chicken

4 chicken breasts

1 tsp salt

1/4 tsp pepper

3 TBL butter

1 1/2 cup whole cranberries

1cup brown sugar

3/4 cup water

1/2 tsp cinnamon

1/4 tsp salt

1/4 tsp ground cloves

1 TBL flour

1box of stovetop stuffing mix

4 TBLS cream cheese

1/3 cup butter or margarine

1 1/2 cups cream

Salt and pepper to taste

Put chicken, salt, pepper in a pot and cover with water boil for thirty minutes or until the chicken is cooked through. Set aside to cool.

In a sauce pan melt the butter, stir in the flour, brown sugar, cranberries, cloves, cinnamon, 3/4 cups water. Bring to a boil, reduce heat and let simmer for twenty minutes. Crush the berries.

In a saucepan melt butter and cream cheese, and salt and pepper, add cream and stir until blended.

Prepare stuffing mix according to directions.

Assemble in a casserole dish…chicken on the bottom, cover with cream sauce, then cranberry sauce, then top with stuffing…in an oven preheated to 375 bake for twenty minutes until top is crunchy.
