Lauren’s Favorite Kabobs
1/4 c vegetable oil
1/3 c honey
1/3 c soy sauce
1/4 tsp ground black pepper
1 clove garlic, minced
2 boneless, skinless chicken breasts, cut into chunks
1 medium onion cut into 2 inch pieces
1 bell pepper, cut into 2 inch pieces
In a large bowl, mix the first five ingredients until well blended. Reserve a little of the mixture for basting. Add the chicken, onion, and pepper and mix well. Cover and refrigerate for at least two hours (overnight is better). You don’t have to use skewers for this, but if you are thread the chicken, onion, and peppers onto the skewers. If not, then put a little oil in a frying pan or heat up your George Forman grill. Add the meat and vegetables and cook until the juice runs clear.
