Refrigerator Pickles
3 1/2 cups water
1 1/4 cups white vinegar
1 Tablespoon sugar
1 Tablespoon salt
4 cups cucumbers (you can slice them into chips, cut them into spears, or leave them whole)
2 cloves of garlic
2 Tablespoons fresh dill
2 Tablespoons red pepper flakes
Stir water, vinegar, sugar, and salt together in a saucepan over high heat. Bring to a boil, remove from heat and allow to cool completely.
Use can use canning jars or any container with a lid. I use large glass jars. I put the cucumber in first and then put the garlic, dill, and red pepper flakes on top. Then I pour the cooled vinegar mixture over this, seal the container, and shake. These are best if you can leave them alone for three days. I will shake the jar or container once a day until they are ready.
