White Chicken Chili
2 boneless chicken breasts
1 bottle Shiner (or beer of your choosing)*
1 medium onion, chopped
1 1/2 tsp garlic powder
2 cans Great Northern Beans, drained and rinsed
1 14.5 ounce chicken broth (or use the liquid from cooking the chicken)*
1 tsp salt
1 tsp oregano
1/2 tsp pepper
1$ tsp cayenne pepper
1 cup sour cream
1/2 cup whipping cream
2-4 ounce cans of diced green chilies (as hot as you please)
Place chicken, onion, and spices in a pot. Pour in Shiner and 2 cups of water. Cook over medium heat until chicken is cooked through. Remove chicken from stock and allow to cool, then chop and return to the pot. Add the sour cream, whipping cream, and chilies, and mix well…it is ready to serve when it is heated through.
*If you prefer to use chicken broth, chop the chicken and cook it and onion in 1 TBL oil until chicken is cooked through. Omit the beer.
