Khao Phat - a la Boots
2 boneless, skinless chicken breasts, cubed
1 bunch green onions
1 large white onion
1/2 cup margarine
1/4 cup crushed garlic
1/2 cup soy sauce
2 eggs, hard boiled and chopped
6 cups cooked white rice
cucumber, peeled and sliced
Melt butter in a frying pan, add garlic and cook until the garlic is golden brown. Add cubed chicken and onion and cook until onion is tender and the chicken is cooked through. In a large pot mix rice, chicken mixture, and soy sauce (adjust for taste). Mix in chopped eggs and stir until well-blended.
Garnish with green onions, cucumber, and hot sauce, if you like.
