Greek Cake

2 cups all purpose flour

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp salt

1 1/4 c milk

1/4 cup liqueur (Grand Marnier, Fireball)

1/4 cup orange juice

3 large eggs

2 cups sugar

1 cup olive oil (I use one with a light taste)

Preheat oven to 375. Spray a 9” round cake pan with cooking spray. Cut a 9” parchment round and place in the bottom of the pan. Spray the paper and the pan and coat with flour.

Mix all ingredients, whisk lightly until smooth. Pour batter into pan and bake until golden brown, 60-70 minutes. A toothpick or knife should come out clean when you put it in the center of the cake.
