Peach Cobbler

1/2 c unsalted butter

1 c all-purpose flour

2 cups brown sugar, divided

1 TBL baking powder

pinch of salt

1 c milk

4 cups fresh peach slices

1 TBL lemon juice

1 TBL ground cinnamon

Preheat oven to 375®.

Melt butter in pan (I use my crockpot, but you can use a 9x13 pan, too).

Combine flour, 1 c brown sugar, baking powder, and salt; add milk, stirring until just combined. Pour the batter over the melted butter (do not stir).

Bring remaining 1 cup brown sugar, peach slices, lemon juice, and cinnamon to a boil over high heat, stirring constantly; pour over batter (do not stir!).

Bake for 40-45 minutes or until golden brown.

If you are using a crockpot to cook this, assemble the ingredients as listed above, but cook on HIGH for 2 1/2 to 3 hours…check the center of the cake for “doneness” at about 2 hours and adjust as needed.
