Prize Pig Biscuits

4 c self rising flour

2 TBL baking powder

1tsp baking soda

3 sticks cold butter, diced

2 large eggs

3/4 cup buttermilk

2 cups shredded cheese (I use sharp cheddar)

1 lb pepper bacon, cooked until crispy and crumbled.

OR 1lb breakfast sausage, cooked and drained

Cook bacon or sausage and set aside to cool.

In a stand mixer blend dry ingredients. Add chopped butter and mix until butter is pea-sized. Add eggs and mix. Add buttermilk and mix until dough forms. Add cheese and crumbled meat and mix until uniform. Roll dough onto floured surface and cut out biscuits. Cook for 15-20 minutes in 400 oven.

These biscuits freeze well. No need to defrost…place frozen biscuits on parchment and cook the same way.
