Tres Leches Cake
1 box of yellow cake mix
1 1/4 cup water
1 TBL vegetable oil
2 tsp vanilla
4 eggs
1 can (14 oz) sweetened condensed milk
1 cup evaporated milk (you can use regular milk, too)
1 cup heavy cream
1 tub of Cool Whip or sweetened whipped cream
Preheat oven to 350. Grease and flour a 13x9 inch pan. In a large bowl, beat cake mix, water, oil, vanilla, and eggs with a whisk until blended. Continue whisking for 200 strokes (100 with each hand so you can work those muscles). Pour into pan and bake for 25-35 minutes (knife comes out clean). Let stand for 5 minutes. Poke the cake with the end of a wooden spoon…there should be a hole poked every 1/2 in the cake.
In a medium sized bowl, stir together the milks and cream. Carefully pour this mixture over the top of the cake. It will soak into the holes you have made. Cover and refrigerate for about an hour. Cover the cake with the Cool Whip.
