Sopapilla Cheesecake
2 cans of refrigerated crescent roll dough (or dough sheets, if you can find them)
2 8 ounce packages of cream cheese, softened
1 cup granulated sugar
1 tsp vanilla
3/4 cup granulated sugar
2 TBS cinnamon
1/2 cup melted butter or margarine
Preheat oven to 350®.
In a mixing bowl, beat the cream cheese and 1 cup of sugar until light and fluffy. Add vanilla and mix thoroughly.
In a 9 x 13 baking dish, spread one of the rolls of dough in the bottom. Press the dough until it covers the bottom of the pan. Next, spread the cream cheese mixture over the layer of dough. Spread the second roll of dough over the mixture. Mix the cinnamon and remaining sugar together and sprinkle heavily over the top of the second layer of dough. Drizzle the melted butter over all of it.
Bake for 30 minutes. Let cool completely. Store leftovers in the fridge.
