Tortellini Salad

9 oz fresh cheese (other fillings make a nice option) tortellini

1/2 cup olive oil, plus 1 TBL, divided

salt/pepper to taste

2 TBL balsamic vinegar

8 oz mozzarella balls

1/2 tsp Italian seasoning

1/2 tsp red pepper flakes

4 oz sliced salami

1 cup sliced cherry or grape tomatoes

1/4 cup capers

Cook tortellini according to package instructions, drain and transfer to a large bowl.

In a small jar mix the salt and pepper, 1/2 c olive oil, balsamic vinegar, the seasoning and red flakes. Shake until well blended.

Add mozzarella, salami, and capers to cooled tortellini. Pour contents of jar over the bowl and mix thoroughly. Serve at room temperature or chilled.
